Ingredients
1 1/2 Cups spelt flour (white or whole)
3/4 Cups cold sparkling water
1/2 Tsp pink Himalayan sea salt
1/8 Tsp onion powder
Directions
Put flour in a mixing bowl, add salt and onion powder and mix. Pour in sparkling spring water 1/4 cup at a time and knead until you get a dough ball. Your dough should be only slightly tacky to touch. Divide dough into 8 to 10 pieces depending on how large you want your tortilla. Use a rolling pin to roll dough balls into a circular shape, about 1/8″ thickness. Heat a cast iron circular tortilla pan on medium high heat. Dust rolled out dough with flour and place on heated pan. Cook about 30 seconds to a minute on each side and remove from pan. Repeat for each rolled out dough.
